Sushi Rice (uncooked)
Uncooked sushi rice weighs 200g per cup. Short-grain Japanese rice (koshihikari or calrose varieties) high in amylopectin starch, giving the characteristic stickiness needed for sushi and onigiri to hold their shape. Rinse 3-5 times until water runs clear, then soak 30 minutes before cooking with 1:1.1 rice-to-water ratio. After cooking, season warm rice with rice vinegar, sugar, and salt (1 tbsp vinegar + 1 tsp sugar + ½ tsp salt per cup uncooked rice).
