Red Rice
Uncooked red rice weighs 190g per cup. The red bran (which gives the color) is rich in anthocyanins. Bhutanese red rice cooks fastest (20 minutes); Camargue red rice from France takes 30-35 minutes with a 1:2.5 ratio. Earthier and chewier than brown rice with a slightly sweet finish. Holds shape well in pilafs and salads, doesn't go mushy. Pairs especially well with curries, roasted root vegetables, and Mediterranean herbs like thyme and rosemary.
