Black Rice (Forbidden Rice)
Uncooked black rice weighs 190g per cup. Also called "forbidden rice" — once reserved for Chinese emperors. Cooks in 30-35 minutes with a 1:2 rice-to-water ratio, turning a deep purple-black when done. Highest antioxidant content of any rice (more than blueberries). Slightly chewy with a nutty, mildly sweet flavor. Stunning in fruit salads, grain bowls, and as a side to roasted salmon. The dye is intense — don't be alarmed if the cooking water turns dark.
