Shelled pistachios weigh 123g per cup. They have a distinctive green color that makes them popular in baking and Middle Eastern desserts like baklava and halva. Roasted and salted pistachios weigh the same as raw. Chopped pistachios are slightly denser. For recipes where color matters, use raw, unsalted pistachios — roasting dulls the green.
