Soft goat cheese (chèvre) weighs about 135g per cup, crumbled. Tangier than cow's milk cheese and naturally lower-lactose, making it easier on sensitive stomachs. The texture firms up dramatically in the fridge — let it come to room temperature before crumbling to avoid breaking it into wet shards. Pairs classically with beets, honey, and figs.
