Coconut Cream
Coconut cream weighs 240g per cup and is the thick, fatty portion from the top of a can of full-fat coconut milk. It has about 20-25% fat, much richer than coconut milk. Use it as a dairy-free whipped cream substitute — chill the can overnight, scoop the solid cream, and whip with powdered sugar. Coconut cream thickens curries and makes rich, dairy-free ice cream. Store opened coconut cream in the refrigerator and use within five days.
