Whole cashews weigh 130g per cup. Their creamy texture when blended makes them the base for vegan cream sauces, cheese, and ice cream. Soak cashews in boiling water for 30 minutes (or cold water for 4 hours) before blending for the smoothest result. Raw and roasted cashews weigh the same per cup. Chopped cashews are denser at about 140g per cup. Store raw cashews in the refrigerator for up to six months to prevent the oils from going rancid.
