Blue Cheese (crumbled)
Crumbled blue cheese weighs about 135g per cup. The blue veins are cultivated Penicillium roqueforti, which gives the salty, sharp bite. Roquefort, Stilton, and Gorgonzola differ in intensity (Stilton mildest, Roquefort sharpest). For dressings, mash 60g into ½ cup buttermilk for a chunky version, or blend smooth. Crumbles freeze well — spread on a tray to flash-freeze before bagging to prevent clumping.
