Wild Rice
Uncooked wild rice weighs 160g per cup — lighter than regular rice because the long, thin grains don't pack as densely. Technically a grass seed, not rice. Cooks in 45-50 minutes with a 1:3 rice-to-water ratio, expanding 3-4× to about 540g. The grains should burst open when fully cooked — drain any excess water at that point. Nutty, earthy, and chewy; perfect in pilafs, stuffings, and grain salads.
