Turmeric (ground)
Ground turmeric weighs 100g per cup, though you will rarely use that much. Typical amounts are 1/4 to 1 teaspoon. Turmeric stains everything — cutting boards, countertops, clothing, and fingers — so handle with care. Its flavor is earthy, slightly bitter, and peppery. Black pepper increases the absorption of curcumin, the active compound. Store in a cool, dark place in a sealed jar for up to three years. Replace if the color has faded or the aroma is weak.
