Teff Flour
Teff flour weighs 100g per cup — lighter than most flours because of its very fine grind. The base of Ethiopian injera, it's naturally gluten-free with a slightly malty, earthy flavor. High in iron and resistant starch. Substitute up to 25% of all-purpose flour with teff for added nutrition without changing texture significantly; beyond that, it gets noticeably dense. Store airtight in a cool place; the high oil content means it can go rancid within 6 months.
