Sorghum Flour
Sorghum flour weighs 122g per cup. Naturally gluten-free with a neutral, slightly sweet flavor — closest of the GF flours to whole-wheat in baking behavior. Works best as part of a blend (typical GF blend: 40% sorghum, 30% rice flour, 20% tapioca, 10% starch). On its own it produces dense results. Substitute up to 30% of wheat flour in cakes and quick breads for added fiber. The whole grain version retains more bran and is more nutritious.
