Sunflower seed butter weighs 240g per cup — same as peanut and almond butter. The leading nut-free school-safe substitute, with a slightly green-grassy flavor that can turn baked goods green when reacting with baking soda (harmless but startling). To prevent the green tint, use baking powder instead, or add 1 tablespoon lemon juice per cup of batter. Substitutes for peanut butter 1:1 in cookies, sauces, and dressings.
