Quinoa (dry)
Dry quinoa weighs 170g per cup and roughly triples in volume when cooked. Rinse quinoa before cooking to remove saponin, which gives a bitter taste. Cook at a 1:1.5 ratio of quinoa to water for 15 minutes, then let it steam off heat for 5 minutes. White, red, and black quinoa all weigh the same per cup but have slightly different textures when cooked. Store dry quinoa in an airtight container in a cool, dark place for up to a year.
