Pumpkin Purée
Canned pumpkin purée weighs 245g per cup. A standard 15oz (425g) can yields about 1¾ cups. Real pumpkin purée (not pumpkin pie filling, which has added sugar and spices) makes cakes and muffins exceptionally moist — substitute for half the butter or oil to cut fat without losing tenderness. Homemade purée is wetter; strain in cheesecloth 30 minutes before measuring. Refrigerate leftovers up to 1 week or freeze in ½-cup portions.
