Polenta
Polenta weighs 163g per cup and refers to coarsely ground cornmeal, typically from yellow corn. It needs about 30-40 minutes of simmering with regular stirring at a 1:4 ratio of polenta to liquid. Instant polenta cooks in 5 minutes but has less texture. Once cooked, polenta can be poured into a pan, cooled, sliced, and grilled or fried. Store dry polenta in a sealed container in a cool place for up to six months.
