Meringue Powder
Meringue powder weighs 140g per cup and is made from dried egg whites, sugar, and stabilizers. It is the standard for royal icing because it eliminates the food safety concerns of raw egg whites. Reconstitute by mixing with water according to package directions. Meringue powder produces a more stable, consistent meringue than fresh egg whites. Wilton is the most common brand. Store in a sealed container in a cool, dry place for up to two years.
