Marshmallow Fluff

Marshmallow fluff (crème) weighs 200g per cup. A spreadable version of marshmallow made from egg whites, sugar syrup, and vanilla — the base of fluffernutter sandwiches, fudge, and the classic Whoopie pie filling. Substitutes for 4 cups mini marshmallows in any melted application (about 7g fluff per marshmallow). Doesn't melt as cleanly as marshmallows — work it briefly into warm mixtures rather than expecting it to dissolve. Stays soft and spreadable at room temperature for months.
