Kefir (plain)
Plain kefir weighs 245g per cup — essentially the same as milk and yogurt. A fermented milk drink with more strains of beneficial bacteria and yeasts than yogurt (10-30 vs 1-3), giving a tangier, slightly effervescent finish. Substitute 1:1 for buttermilk in pancakes, biscuits, and quick breads — the live cultures will react with baking soda to lift. Refrigerate at all times; carbonation builds if left at room temperature.
