Garlic Powder
Garlic powder weighs 155g per cup, dense for a spice. One teaspoon of garlic powder equals roughly 2-3 fresh garlic cloves. It dissolves into sauces and rubs more evenly than fresh garlic and does not burn as easily. Granulated garlic is coarser and takes longer to dissolve but can be used interchangeably by weight. Garlic powder clumps in humid conditions — store in a sealed container with a tight lid. Replace after a year for best flavor.
