Garam Masala
Garam masala weighs 96g per cup — but most recipes use just 1-2 teaspoons. A north-Indian blend traditionally toasted and ground at home: cardamom, cinnamon, cloves, cumin, coriander, black pepper, and bay. Added late in cooking (last 5 minutes) so the volatile aromatics aren't driven off by long simmering. Store in an opaque jar — light degrades the warm-spice essential oils within weeks.
