Fresh Mozzarella
Fresh mozzarella weighs about 135g per cup, cubed or torn — moister than low-moisture shredded mozzarella (185g/cup) because it's stored in brine or whey. Made from cow or water buffalo milk (bufala is creamier and pricier). For caprese and pizza, tear by hand rather than cubing — the rough edges grip dressing better. Drain on paper towels 10 minutes before topping pizza to prevent a soggy crust. Use within 3-4 days of opening.
