Fresh Blueberries
Fresh blueberries weigh 140g per cup. A standard 6oz (170g) clamshell yields about 1¼ cups. Toss in 1 tablespoon flour or cornstarch before folding into muffin or pancake batter — coats the berries so they don't sink to the bottom or bleed into the dough. Wild (smaller) blueberries are more intense in flavor than cultivated; substitute by volume. Freeze on a tray in a single layer before bagging to keep them from clumping — last 6+ months frozen.
