Dried Cranberries
Dried cranberries weigh 160g per cup. Most commercial dried cranberries (like Craisins) are sweetened, as unsweetened cranberries are extremely tart. They can substitute for raisins in most recipes for a tangier result. Chop roughly if you want them distributed more evenly through batters. Soak in warm water or orange juice for 15 minutes to plump before adding to baked goods. Store in a sealed container at room temperature for up to a year.
