Duck Fat
Duck fat weighs 218g per cup and has a rich, savory flavor that makes roasted potatoes, confit, and pastry crusts extraordinary. It has a higher smoke point than butter at about 375 degrees Fahrenheit. Duck fat is solid at refrigerator temperature and softens at room temperature. Use it the same way you would use lard or schmaltz. Store in the refrigerator for up to six months or freeze for a year. Strain before storing to remove food particles.
