Curry Powder
Curry powder weighs 108g per cup and is a blend of many spices — typically turmeric, coriander, cumin, fenugreek, and chili. Every brand and region has a different recipe. Madras curry powder is hotter; mild curry powder has less chili. The turmeric in curry powder stains heavily. Toast curry powder in a dry pan for 30 seconds before adding liquid to bloom the spices and deepen the flavor. Store in a sealed container and replace after six months.
