Cornstarch
Cornstarch weighs 128g per cup and is used as a thickener for sauces, gravies, and pie fillings. It has twice the thickening power of flour. Always mix cornstarch with cold liquid before adding to hot mixtures to prevent lumps. In German baking, Speisestärke (usually corn or potato starch) is a common ingredient in torte recipes.
