Cornmeal
Cornmeal weighs 150g per cup and comes in fine, medium, and coarse grinds. Fine cornmeal produces smoother cornbread; coarse cornmeal gives a grittier texture. Stone-ground cornmeal retains more flavor and nutrients but spoils faster. Degerminated cornmeal lasts much longer but tastes milder. Store stone-ground cornmeal in the refrigerator for up to three months. Degerminated cornmeal keeps at room temperature for a year.
