Sweetened Condensed Milk
Sweetened condensed milk weighs 306g per cup, heavier than regular milk because of its high sugar content (about 40% sugar by weight). It is the key ingredient in key lime pie, dulce de leche, and fudge. To make dulce de leche, simmer a sealed can in water for 2-3 hours. Do not confuse with evaporated milk, which is unsweetened. Once opened, store in a sealed container in the refrigerator and use within two weeks.
