Coconut Milk (canned)
Canned coconut milk weighs 240g per cup. Shake the can before opening to combine the cream and liquid. Full-fat coconut milk is about 17-20% fat. Light coconut milk is diluted and works differently in recipes. Coconut milk from a carton is much thinner and lighter — do not substitute it for canned coconut milk in recipes like curry or coconut rice. Once opened, store in a sealed container in the refrigerator and use within four days.
