Cloves (ground)
Ground cloves weigh 110g per cup, but you will use fractions of a teaspoon in most recipes. Cloves have an intense, warming, slightly numbing flavor. Too much can overpower a dish. Start with half the recommended amount and adjust. Whole cloves can be studded into hams or simmered in mulled wine. Ground cloves lose potency faster than whole — replace after six months. Store in a dark, sealed container. Cloves pair well with cinnamon, nutmeg, and ginger.
