Chia Seeds
Chia seeds weigh 160g per cup. They absorb about 12 times their weight in water, forming a gel that makes them useful as a thickener and egg substitute. For a chia egg, mix 1 tablespoon chia seeds with 3 tablespoons water and wait 10 minutes. Chia pudding uses a 1:4 ratio of seeds to liquid, refrigerated overnight. Unlike flaxseed, chia seeds do not need to be ground to access their nutrients. Store in a sealed container in a cool place for up to two years.
