Butterscotch Chips
Butterscotch chips weigh 170g per cup, same as chocolate chips. They melt less smoothly than chocolate because they contain hydrogenated oils. For sauces, add a tablespoon of cream to help them melt evenly. Butterscotch chips pair well with oatmeal cookies, blondies, and apple desserts. They do not temper like chocolate, so dipped items will have a softer coating. Store in a sealed bag at room temperature for up to a year.
