Bulgur
Bulgur weighs 140g per cup and comes in fine, medium, and coarse grinds. Fine bulgur needs only soaking in hot water for 15-20 minutes — no cooking required. Medium and coarse bulgur benefit from brief simmering. It is the base for tabbouleh and kibbeh. Bulgur has a nutty flavor and chewy texture. One cup dry yields about 2.5 cups cooked. Store in a sealed container in a cool, dry place for up to six months.
