Buckwheat Groats
Raw buckwheat groats weigh 170g per cup. Despite the name, not related to wheat — it's a pseudocereal seed, naturally gluten-free. Untoasted groats are mild; toasted groats (kasha) are nutty and assertive. Cook 1:2 with water for 15-18 minutes for a porridge texture, or 1:1.5 for separate grains. Common in Eastern European cuisine for kasha varnishkes, and the base of Japanese soba noodles when ground into flour.
