Rendered bacon fat weighs 218g per cup. The strained drippings from cooking bacon — savory, smoky, and intensely flavored. Strain through coffee filters or fine cheesecloth to remove particulates that would burn on reheating. Use 1-2 tablespoons in place of butter for roasted potatoes, cornbread, and greens.
