Uncooked arborio rice weighs 200g per cup. The high-amylopectin starch is what makes risotto creamy — that's why you stir constantly and add broth gradually. Standard risotto ratio: 1 cup rice to 4 cups warm broth, added one ladle at a time over 18-20 minutes. Carnaroli and vialone nano are higher-end alternatives with the same density. Don't rinse arborio; you want that surface starch to release into the dish.
