Amaranth
Amaranth weighs 195g per cup. These tiny seeds are gluten-free and high in protein. Cook at a 1:3 ratio of amaranth to water for 20-25 minutes. The cooked result is porridge-like and slightly sticky, not fluffy like rice. Amaranth can also be popped like popcorn in a dry hot pan — it puffs up in seconds. Use popped amaranth as a crunchy topping. Store dry amaranth in a sealed container for up to a year.
