Understanding Flour Types: From All-Purpose to Coconut Flour

What Makes Flours Different

The main thing that separates one flour from another is protein content. When flour proteins (glutenin and gliadin) mix with water, they form gluten — the elastic network that gives bread its chew and structure. More protein means more gluten. Less protein means a more tender, crumbly result. That's the fundamental trade-off in flour selection.

All-Purpose Flour

Protein content: 10-12%. Weight: 125g per cup.

All-purpose flour is a blend of hard and soft wheat, designed to work in most recipes. It produces a moderate amount of gluten — enough structure for cookies and quick breads, but not so much that cakes become tough. Most American recipes are written for all-purpose flour. When a recipe just says "flour" without specifying the type, this is what they mean.

Bread Flour

Protein content: 12-14%. Weight: 127g per cup.

Bread flour has more protein, which means more gluten development. This gives bread dough its stretch and elasticity, and the finished loaf its chewy interior. If you substitute all-purpose flour in a bread recipe, the dough will be less elastic and the crumb will be softer and more open. You can make bread with all-purpose flour — it works — but bread flour gives you a stronger, chewier result.

Cake Flour

Protein content: 7-9%. Weight: 114g per cup.

Cake flour is milled from soft wheat and has the lowest protein content of the common wheat flours. It's also bleached, which weakens the gluten further and allows the flour to absorb more liquid and fat. The result is a fine-grained, tender crumb — exactly what you want in layer cakes and delicate baked goods. Cake flour is lighter per cup because the particles are finer.

Whole Wheat Flour

Protein content: 13-14%. Weight: 128g per cup.

Whole wheat flour includes the bran and germ, which adds fiber, fat, and a nutty flavor. Despite its high protein content, the sharp bran particles cut through gluten strands as they form. This means whole wheat dough produces a denser, heavier result than white bread flour dough. Most bakers mix whole wheat with all-purpose or bread flour — a 50/50 blend is a good starting point — to get the flavor without a brick-like texture.

Almond Flour

Protein content: 21% (but no gluten). Weight: 96g per cup.

Almond flour is just blanched almonds ground into a fine powder. It has no gluten, so it can't provide structure on its own. In baked goods, it adds moisture, richness, and a subtle nutty flavor. It works well in macarons, financiers, and gluten-free cookies. Because it's high in fat, it produces a denser, moister result than wheat flour. Store it in the fridge or freezer to prevent the oils from going rancid.

Coconut Flour

Protein content: 19% (no gluten). Weight: 112g per cup.

Coconut flour is extremely absorbent — it soaks up roughly 3-4 times its weight in liquid. You cannot substitute it 1:1 for wheat flour. A typical starting point is 1/4 to 1/3 cup of coconut flour for every 1 cup of all-purpose flour, with extra eggs or liquid to compensate. Recipes specifically developed for coconut flour work best. Trying to adapt a wheat flour recipe to coconut flour usually requires significant testing.

Choosing the Right Flour

Here's a quick decision guide:

  • Making sandwich bread or pizza dough? Use bread flour for the best chew and structure.
  • Making a layer cake or cupcakes? Use cake flour for the lightest, most tender crumb.
  • Making cookies, muffins, or quick breads? All-purpose flour handles all of these well.
  • Want more nutrition and flavor? Mix in 25-50% whole wheat flour.
  • Need gluten-free? Almond flour works for cookies and dense cakes. Coconut flour works in recipes written specifically for it.

When in doubt, all-purpose flour is the safe bet. It won't give you the absolute best result in every application, but it'll give you a good result in almost everything.
