White Vinegar
Distilled white vinegar weighs 240g per cup — essentially water density. With 5% acetic acid and a sharp, neutral flavor, it's the workhorse vinegar for pickling, brining, and cleaning. In baking, 1 teaspoon reacts with baking soda to lift cakes and muffins — useful in vegan recipes that skip eggs. For substituting in dressings, use 25% less than other vinegars since it's more aggressive. Shelf-stable indefinitely.
