Turbinado Sugar
Turbinado sugar weighs 200g per cup. Often sold as Sugar in the Raw, it has large blonde crystals with a subtle molasses flavor. It works well for rimming cocktail glasses, topping oatmeal, and sprinkling on pastries. The coarse crystals do not dissolve as easily in batters, so it is not the best choice for delicate cakes. To use in baking, grind briefly in a food processor. Store in an airtight container at room temperature.
