Tomato paste weighs 262g per cup — the densest tomato product by far, since it's tomatoes reduced to roughly one-sixth their original volume. A standard 6oz (170g) can yields about ⅔ cup. Caramelize 2 tablespoons in a dry pan or with oil for 1-2 minutes before adding liquid — develops sweetness and umami impossible to achieve any other way. Freeze leftovers in 1-tablespoon dollops on parchment, then transfer to a freezer bag.
