Sunflower Oil
Sunflower oil weighs 218g per cup. The dominant cooking oil in much of Eastern Europe and a common neutral baking oil worldwide. High oleic sunflower oil has a smoke point of 232°C (450°F) and stores well; regular sunflower oil is lower at 227°C (440°F) and oxidizes faster. Substitute 1:1 for any neutral oil (vegetable, canola, safflower). Cold-pressed sunflower oil has a distinct nutty flavor — use as a finishing oil, not for high-heat cooking.
