Spelt Flour

Spelt flour is an ancient grain with a slightly sweet, nutty flavor. At 120g per cup, it weighs similarly to whole wheat flour. Spelt can often substitute for AP flour 1:1 by weight, but requires gentler mixing as its gluten is more fragile. Reduce mixing time by about 25% compared to wheat flour recipes. German Type 630 is the standard spelt flour widely available in German supermarkets.
