Semolina

Semolina is coarsely ground durum wheat, weighing 167g per cup. Its high gluten content makes it ideal for pasta, gnocchi, and certain breads. When measuring, scoop and level like flour. The coarse texture means it does not compact as much as fine flour, so cup measurements are fairly consistent. Store in a sealed container in a cool, dry place for up to a year. In baking, semolina adds a slightly gritty, pleasant texture to cakes and cookies. It is not interchangeable with semolina flour, which is ground much finer.
