Rice Vinegar
Rice vinegar weighs 240g per cup. Milder and slightly sweeter than other vinegars (acidity ~4-4.5% vs 5-6% for white), making it the standard for sushi rice seasoning and Asian dressings. Three types: unseasoned (versatile), seasoned (with sugar + salt — adjust your recipe accordingly), and black (aged, more complex flavor).
