Pitted prunes weigh 170g per cup. Dried plums, with concentrated sweetness and a deep, almost-malty flavor. Chop and soak in warm tea or brandy for 30 minutes before adding to fruitcakes, stuffings, or pork dishes to plump them up. Excellent natural binder — puréed prunes substitute for half the butter in chocolate brownies without anyone noticing the swap. High fiber content makes them a classic digestive aid.
