Pesto (Genovese)

Pesto Genovese weighs 240g per cup. The classic emulsion of fresh basil, pine nuts, parmesan, garlic, and olive oil from Liguria. Authentic pesto is mortar-and-pestle pounded, never blended — the metal blades oxidize basil to brown and break the emulsion. For pasta, toss 2-3 tablespoons per serving with a splash of pasta water to loosen. Freezes well in ice cube trays for portioned use. Top a jar with a thin layer of olive oil to prevent browning in the fridge.
