Nutritional Yeast
Nutritional yeast weighs only 60g per cup — flake form makes it extremely airy. Despite the name, it's deactivated yeast that won't leaven bread; the role is umami flavor and B-vitamins. Sprinkle on popcorn, pasta, or roasted vegetables for a cheesy, nutty hit. Substitutes for parmesan at about ¾ the quantity in vegan dishes. Most brands are fortified with B12, making them a key vegan staple. Store airtight away from light.
