Muscovado Sugar
Muscovado sugar weighs 220g per cup, packed like brown sugar. It is minimally refined with a high molasses content, producing an intense, almost liquorice-like depth. Dark muscovado is stronger; light muscovado is closer to standard brown sugar. It clumps aggressively — break up lumps before measuring. Muscovado adds complexity to gingerbread, barbecue sauces, and dark chocolate desserts. Store in a sealed container with a terracotta disc or bread slice to keep it soft.
